Spicy Dressing

Sometimes simplest is best. This easy dressing is great for salads or veggies, or can be used to drizzle over rice, pasta, or even over toast.

1/2 cup olive oil
Juice of 1 1/2 lemon
2 tablespoons tomato paste
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon ground cumin
pinch of black pepper

Place all the ingredients in a blender, and blend on a low speed for a minute. This dressing is sometimes more flavorful if you leave it to marinate itself overnight in the refrigerator.
