Rosemary Roasted Potatoes

Potatoes are one of my favorite vegetables. I know they are not the healthiest veg around but potatoes are just so darn delicious and also versatile. You can make French fries, chips, baked potatoes, roasted potatoes, scalloped potatoes, mashed potatoes, potato salad, potato soup, many subjis, potatoes au gratin, double stuffed potatoes and hash browns. My love for potatoes has made me also quite fond of Ekadasi, the day that comes once every two weeks where Vaishnavas fast from grains. Since grains are off the menu, I feel I can get away with slipping some extra potatoes into the day. (They are quite high in vitamins B6 and C, and also iron, so they’re good for you!)
This Ekadasi, I’m slipping some potatoes into our dinner in the form of Rosemary Roasted Potatoes. I love roasted potatoes--they are both crunchy and soft at the same time. Just lovely. If you happen to make roasted potatoes for dinner, make sure you also make something healthy like some sautéed broccoli and some pumpkin soup (that’s what we are having). These potatoes take quite some time to make if you are going for crispy, but if you want, you could boil the potatoes until they are semi soft before you bake them, in order to cut out some oven time.

12 medium potatoes
4 tablespoons butter
2 teaspoons salt
1/2 teaspoon freshly ground pepper
1/4 teaspoon hing
4 sprigs fresh rosemary

1. Preheat oven to 405 F.
2. Cut the potatoes into even “bite-size” cubes and place into a large baking dish. Cut the butter into smallish pieces and place around the top of the potatoes.
3. Sprinkle on the rest of the ingredients over the potatoes and butter (if you on’t have fresh rosemary, use 1/2 teaspoon per ‘sprig’ called for in recipes), and place in the oven until the butter has melted. Stir the seasonings and butter to evenly coat the potatoes. Return potatoes to oven.
4. Keep stirring every now and again so the potatoes cook evenly. The potatoes are done when some become golden brown and crispy. This will take at least one hour.

These do take some time to cook so start cooking them long before you wish to have dinner. Spices can be adjusted according to your preference. As these do not taste so good as leftovers I suggest only making as much as you need. These roasted potatoes are a delish treat with minimal effort required so give them a try.
