Apricot Stuffing

A simple side dish for the holidays, or whenever you need a change from potatoes.


  • 1⁄2 cup dried apricots, chopped
  • 3⁄4 cup water
  • 1⁄2 cup celery, chopped
  • 1⁄8 cup walnuts or pine nuts, chopped
  • 6 slices dry bread, cut into small cubes
  • 1⁄2 tsp. salt
  • 1⁄2 tsp. thyme
  • 1⁄2 tsp. sage
  • 1⁄4 Tbsp. hing


  1. In a saucepan, bring water and apricots just to a boil. Let stand for 10 minutes.
  2. Add celery, nuts, spices, and bread. Toss lightly to moisten bread and blend ingredients.
  3. Bake at 350°F for about 40 minutes. Remove lid during last 10 minutes of baking to brown the top.
