Apricot Stuffing
A simple side dish for the holidays, or whenever you need a change from potatoes.

Ingredients
- 1⁄2 c dried apricots, chopped
- 3⁄4 c water
- 1⁄2 c celery, chopped
- 1⁄8 c walnuts or pinenuts, chopped
- 6 sli dry bread, cut into small cubes
- 1⁄2 t salt
- 1⁄2 t thyme
- 1⁄2 t sage
- 1⁄4 T hing
Instructions
- In a saucepan, bring water and apricots just to a biol. Let stand for 10 minutes.
- Add celery, nuts, spices, and bread. Toss lightly to moisten bread and blend ingredients.
- Bake at 350°F for about 40 minutes. remove lif during last 10 minutes of baking to brown the top.
