These delicious doughnuts are light and fluffy, can be served with a variety of toppings, and are a favorite with all ages.

Ingredients

  • 2 T yeast
  • 1 1⁄2 c warm water
  • 1 c mashed potatoes, unseasoned, lukewarm
  • 6 c all purpose flour
  • 1 c sugar
  • 2⁄3 c butter, soft
  • 5 T buttermilk
  • 2 t salt

Instructions

  1. Mix together yeast and water and let sit until frothy, about 12 min. If using instant yeast, this step can be skipped.
  2. Combine the sugar, mashed potatoes, butter and salt.
  3. Add the yeast water or if using instant yeast, add the water and unproofed yeast.
  4. Mix all together and gradually add the flour until the dough is soft and smooth.
  5. Place dough in a well buttered bowl, cover with plastic wrap and place in the refrigerator for 8 hours or up to 3 days. Let it come to room temperature when ready to use.
  6. 6. Remove dough from bowl and place on a well floured counter or board. Roll dough out to a ½ inch thickness and cut with a doughnut cutter.
  7. Generously butter and flour trays.
  8. Place cut doughnuts and doughnut holes onto sheets, leaving room for the doughnuts to rise.
  9. Allow the doughnuts to double in size. The time will depend on the room temperature -- usually about 1 ½ to 2 hours.
  10. Fry doughnuts in hot ghee or oil at 375-425 degrees.
  11. Cook a few minutes on each side until golden brown and place on a cooling rack to drain and cool.
  12. While the doughnuts are still warm dip in the Vanilla Glaze and return to cooling rack.

Frying Foods

I am a lover of vegan/vegetarian foods, but not of frying foods, so it would be nice to see doughnuts that are baked and not fried.

I found this on Recipezaar.com and think it would be a wonderful substitution for frying the doughnuts.

VEGAN DOUGHNUTS
These are great doughnuts dipped in a sugar glaze or rolled in cinnamon and sugar.

18 doughnuts
time to make 16 min 8 min prep
2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 1/2 teaspoons egg substitute
2 tablespoons water
3/4 cup rice milk
1 teaspoon vanilla extract
4 teaspoons oil

1. preheat oven to 325 degrees.
2. mix flour, sugar, and baking powder.
3. add egg replacer + water (mixed together before adding), rice milk, oil, and vanilla, mix vigorously until well blended.
4. pour batter into a doughnut pan (I'm sure the mixture can somehow be rolled out if you don't have a doughnut pan -- I'm sure a muffin pan might do too).
5. put in oven and bake for 8-10 minutes or until done.
6. dip into a mixed sugar glaze (powdered sugar and water) or roll in a bag filled with cinnamon and sugar.
7. eat away!
