Description
Okra FrittersOkra is also known as lady's finger, bhindi and gumbo. Okra is widely used in a thick stew made with vegetables. It is also sauteed or added to gravy-based preparations.

Ingredients
- 1 lb okra
- 1⁄2 c rice flour
- 1 t salt
- 1⁄2 t cayenne
- 1⁄2 t asafetida
- 1⁄2 c coriander powder
- 20 curry leaves chopped fine
- 1 c water
- oil for deep frying
Instructions
In a large mixing bowl mix all ingredients adding water gradually to avoid dough; that is too wet. Scoop small portions and deep fry in hot ghee. Drain on paper towels and serve with chutney or spicy relish.
