Description
Koftas (Vegetable Balls in Sauce) These spicy dumplings are made of pea flour with mashed potato and peas. I love them. They come with rich sauce and you can have them with rice or with bread.

Ingredients
- 1⁄2 c shredded cabbage
- 1⁄2 c shredded cauliflower
- 1 c mashed potato
- 1⁄4 c vegetable stock
- 1 1⁄2 c chickpea flower
- 1 t asafetida
- 1 t tumeric powder
- 1 t salt
- 1 t roasted cumin powder
- 1 t roasted coriander powder
- 1 t cayenne or paprika powder
- oil for frying
Instructions
In a large mixing bowl place all the ingredients for the Koftas and mix into a coarse dough -using vegetable stock as needed.
Divide into small balls and deep fry using hot ghee.
Stir them as you fry so as to cook evenly.
Drain on paper towels to remove excess ghee.
Add to prepared yogurt sauce. To make the sauce, blend yogurt with mint and salt.

The auspicious day is drawing to an end. Last midnight was the celebration of the Lord's appearance. Today, for the first time, I cooked for Him. It made me feel so good :)
I made the koftas with one little twist-
Having no mint, I made a chutney of coriander (fresh), tomatoes, and green chillies and added that to yoghurt. Then dropped in the Koftas.
Having no chickpea flour also, I used cornflour to bind the balls. I was very nervous but by the Lord's grace it was a success! The family really liked it.
