Ingredients

  • 4 chayote squash peeled, seeded and diced
  • 2 large tomatos chopped
  • 1⁄2 c salted roasted pistachios
  • 1⁄4 c dried raisins
  • 1 t green chilli
  • 1 t ginger paste
  • 10 curry leaves
  • 3 T ghee or vegetable oil
  • 1 t salt
  • 1 t Tumeric

Instructions

Heat ghee in a pan, add mustard seeds and wait till they pop.

Add cumin seeds, asafetida, chili -ginger paste, curry leaves, stir for a minute before adding tomatoes. Sprinkle salt, turmeric and cover.
Simmer until tomatoes are well cooked. Uncover and add squash, stir, replace cover and cook until done. Stir often to avoid scorching squash.

Add ½ cup water if necessary. When squash is well cooked add pistachios, raisins, powdered spices And garnish with chopped cilantro.
