Savory Mashed-Yam Patties

Summary
Ingredients
- 1 lb yams
- 2 T cashews or peanuts, toasted and chopped fine
- 2 T dry coconut, pulverized fine
- 1 1⁄2 tsp fresh ginger root, minced fine
- 1 1⁄2 t hot green chilies, minced fine
- 1 T Lemon or lime juice
- 1⁄2 t cumin powder
- 2 t coriander powder
- 2 T fresh coriander or parsley leaves
- 1⁄4 t teaspoon red chili powder or cayenne
- 1⁄2 t sugar or other sweetener
- 1 t salt
- 3 T dry-roasted chickpea flour
- 1 1⁄2 t teaspoons ghee or vegetable oil
Instructions
1. Peel the yams and steam until tender. Mash them and mix in the remaining ingredients, except for the ghee or oil. Knead the yams until the ingredients are thoroughly mixed in and the yams are smooth. Now shape into eight round patties of equal size.
2. Put the ghee or oil in a heavy 12-inch cast-iron griddle or frying pan and heat over a low flame for about 2 ½ minutes. Brown the patties on each side until they form a nut-brown, slightly crisp crust. Serve the tikkis to Krsna while they're still warm, with a dab of fresh moist chutney or wedges of lemon or lime.

Pav Bhaji
Ingredients :
Pav Bhaji
Tomatoes...........................2-3 medium
Potatoes.............................2 medium
Cauliflower........................10 florets
Capsicum...........................1 no
Cabbage............................50 gm
Green Peas.........................½ Cup
Carrot.................................10gm
Jeera...................................1/4 Tsp
Red Chilli paste...................1 Tsp
1. Finely chop all the vegetables
2. Boil and mash the potatoes
3. Heat oil in a pan and add jeera, grated ginger
4. To this add finely chopped cabbage and capsicum. Allow it to cook
for some time till soft
5. Add red chilli paste, tomato puree, mashed potatoes and cauliflower
and allow it to cook for few minutes.
6. Add pav bhaji masala. Mix properly
7. With a masher mash all the vegetables properly.
Add butter on top, garnish with finely chopped coriander leaves and
lemon.
