Vegetarian Nutloaf
This vegetarian nutloaf, with tomato sauce is a nice main dish for an Italian-style menu. Slice and serve and amaze your guests.

Ingredients
- 1 t basil
- 1⁄2 T thyme
- 1 T sage
- 1 1⁄2 c monterry jack cheese, grated
- 1 1⁄2 c rice, cooked
- 1⁄2 c almonds, blanched
- 1⁄2 c cashews
- 1⁄2 c walnuts
- 1⁄3 c celery, chopped
- 1⁄3 c green pepper, chopped
- 1⁄2 T salt
- 1⁄4 t hing
- 1 t black pepper
- 1 1⁄2 c tomato sauce
Instructions
- Grind nuts together. Combine ground nuts and rice. Add 1 cup grated cheese. Add spices and chopped vegetables. Add 1/2 cup tomato sauce. Mix well.
- Preheat oven to 350°F.
- Mold ingredients into a greased loaf pan.
- Cover with aluminum foil and bake for 50 minutes. Uncover and top with remaining tomato sauce and cheese. Bake for 10 more minutes. Serve hot.
