Almond Cookies
These cookies are delicious and extremely satisfying. They also keep well in an airtight container.

Ingredients
- 2 1⁄2 c all-purpose flour
- 1 1⁄2 t salt
- 1⁄2 t baking powder
- 1 c butter (2 sticks)
- 1 1⁄4 c confectioners’ powdered sugar, sifted, plus more for dusting
- 1⁄2 T powdered egg replacer, combined with 2 T water
- 2 t vanilla extract
- 1⁄4 t almond extract
- 1 c whole raw almonds, toasted and finely ground in a food processor
Instructions
- Preheat oven to 350 degrees. Mix flour, baking powder and salt in a medium bowl and set aside.
- Mix butter and sugar until fluffy. Mix in egg replacer and extracts. Add flour mixture and almonds until combined. Water can be added if the dough is too dry. Wrap dough in plastic and refrigerate for about twenty minutes.
- Roll dough into walnut-sized balls and press down with the palm of your hand.
- Bake cookies on a cookie sheet lined with parchment paper for 20 minutes at 350 degrees F.
- After cookies have cooled, dust them with powdered sugar.

What is an egg replacer powder? Can it be used in other baking reciepes?

Yes it is used in many recipes
It is a powder and about a teaspoon is equivilant to one egg. You can't make a omlette or anything but in cakes and cookies and things like that it can be used for a binding agent
