Mantrini's Family Gravy
A nice gravy to top mashed potatoes or biscuits.

Ingredients
- 3⁄4 c water
- 2 1⁄2 T flour
- 4 c milk
- 1⁄4 c flour
- 4 T butter
Instructions
Part 1
- Melt butter in heavy sauce pan over medium heat.
- Add flour and stir constantly until very dark brown (This gives a good flavor and color). Be careful not to burn.
- Cool slightly and slowly add milk with a whisk and fully incorporate.
- Bring to a boil, stirring constantly, over medium heat.
Part 2
- Shake flour and water in a glass or plastic jar.
- Add that mixture to milk mixture and bring to the boil. Mixture will thicken.
- Add salt and pepper, as desired.
- Other spices can be added such as old bay, sage, thyme etc.
