Banana Nut Bread

What do you do when you have bananas that have just slipped past their ripe phase and are now in the over-ripe phase? The answer for me is to make Banana Nut Bread. This bread is delicious and makes my house smell all warm and homey. Of course you could also make banana muffins which are equally delicious but just a little more trouble to make.

Mozzarella and Tomato Pizza

Almost everyone loves pizza, especially children. The great thing about pizza is that you can customize it to your family’s preferences. It is also a great way to sneak some vegetables into your child’s diet.
This pizza recipe is from Kurma’s cookbook Great Vegetarian Dishes and is delicious. Toppings are up to you. In our house we like to put olives (green or black), broccoli, green peppers, eggplant, tomatoes and basil among other things on top of our pizzas. I also like to make a little extra to send to school with my daughter for her lunch on her school’s pizza day.

Chandra’s Delicious Chewy Brownies

I was at a potluck dinner a few years ago, and my friend Chandra brought some brownies. Growing up as a Hare Krishna on an eggless diet, all the brownies I had ever had were more like cake than the chewy chocolaty goodness that was described to me by my mother when she recalled her childhood encounters with brownies. I have to admit I was skeptical as to Chandra’s brownie’s authenticity, as I had long ago given up on ever finding an eggless chewy brownie recipe.

This weekend is the birthday of Lord Krishna. All around the world, Krishna bhaktas will be celebrating this auspicious event with great joy, by hearing about the pastimes of Krishna, singing songs to Him and making a big feast for Him. Just as you would cook some delicious dishes for your loved one’s birthday, it is also nice to go out of your way to cook some special dishes for Krishna on the occasion of his birth.

Back to the Basics: Fresh Veggies

So much of a dish’s success rests on the ingredients you use. And as vegetarians, we are more aware of the vegetables in our food. So it’s very important to buy the best veggies, and know how to find the best quality. Some of our readers are new to being vegetarians, so I thought I’d offer another quick refresher on some of the basics.
When shopping for fresh vegetables, it can sometimes be confusing, determining which veggies are the best and freshest. I offer here a quick and easy guide (by no means comprehensive) on how to select some of the vegetables used for cooking.

Basmati and Mixed Vegetable Kitchari

When I was little, kitchari was one of my least favorite foods. I thought of it as a salty porridge with lumps of vegetables in it--not very appetizing at all. As I grew older and began to eat better and better kitchari, my opinion slowly changed. These days I consider kitchari, chapatti, yoghurt and pickle a perfect meal. Luckily for me, my daughter hasn’t inherited my childhood dislike for kitchari. She’s loved it from the beginning.

Rosemary Roasted Potatoes

Potatoes are one of my favorite vegetables. I know they are not the healthiest veg around but potatoes are just so darn delicious and also versatile. You can make French fries, chips, baked potatoes, roasted potatoes, scalloped potatoes, mashed potatoes, potato salad, potato soup, many subjis, potatoes au gratin, double stuffed potatoes and hash browns. My love for potatoes has made me also quite fond of Ekadasi, the day that comes once every two weeks where Vaishnavas fast from grains. Since grains are off the menu, I feel I can get away with slipping some extra potatoes into the day.

Basil Pecan Pesto

For me, nothing quite says summer like the aroma of fresh basil. Slightly spicy and absolutely delicious it brings nice flavour to many dishes. The best way to use basil is to avoid cooking it too much. If adding it to pasta, toss it in while the pasta is still hot, but not still cooking, so the heat can release some flavour from the basil, but is not hot enough to kill the basil completely. Same goes for pizza, if making pizza with basil I suggest placing the basil on the pizza just as it comes out of the oven so it gets a little heat but not too much.

Seasoned Black Beans

As vegetarians it is important to make sure that we have enough protein in our diets. Many plant-based proteins must be eaten with some sort of grain in order for it to become a whole protein. Luckily for us combining plant proteins with grains is easy and delicious. For example rice and dahl, peanut butter and bread, and of course beans and rice.

Caramel Shortbread Bars

A while back I shared a recipe for Lush Lemon Raspberry Bars with you all. The recipe I will share today is inspired by that recipe, which I tweaked for a totally different flavour. I was inspired by a British dessert, Millionaires Shortbread which consists of a layer of shortbread, a layer of caramel and a layer of chocolate.
