Cheesy Quinoa for a Group

Its seems like so many people are trying gluten-free diets for health reasons these days. Between that and lactose intolerance, and wheat allergies, and other special foods needs, our office pot luck lunches seem more and more difficult to cook for.

Fortunately I love cooking with quinoa. It's nutritious, versatile, and easy to make large quantities of. And in't gluten free. (For our latose intolerant team members, I used fake cheese in a separate batch of quinoa, too!) Here's my cheesy quinoa recipe:

I recently made this in quantity for our office pot luck, and it’s easy to make in bigger batches. For our family of about 24, I baked a 9”x12” tray.

4 cups quinoa
7 cups water
5 tablespoons soup starter
6 tablespoons butter /olive oil
2 teaspoons salt
1 teaspoons pepper
2 pounds shredded cheddar cheese

Same instructions as the regular recipe, but I used a large heat-resistant bowl to easily mix everything in. It’s great for pot lucks or other events because you can prepare it before hand (or even the day before) and put it in the oven 20 minutes before you need to serve it.

Have fun with this recipe, and have fun trying variations of it (you can add all kinds of things to it). Quinoa is wonderful for you and easy to prepare, and versatile!

P.S. Since quinoa is a seed and not a grain like rice, it has more nutrients. Usually you need to combine proteins and whole grains to get all of the amino acids you need for a 'whole protein'. But quinoa has all of the amino acids you need!
